Ingredients
3 large ripe bananas (about 1½ cups, mashed)
¾ cup almond milk (or any milk of choice)
2½ cups self-rising flour
Instructions
Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
In a large mixing bowl, mash the bananas with a fork until smooth.
Add the milk and whisk until well combined.
Stir in the self-rising flour. Mix gently until just combined—don’t overmix.
Pour the batter into the prepared pan and spread evenly.
Bake for 65 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack. Cool completely before slicing.
Notes
For extra moisture and protein, swap ½ cup of milk for cottage cheese.
Use oat or almond flour for a gluten-free variation (adjust milk slightly).
