Description

This cottage cheese banana bread is moist, flavorful, and protein-packed! Made with ripe bananas, creamy cottage cheese, and pantry staples, it’s perfect for breakfast or a healthy treat

Ingredients

Scale

2 cups all-purpose flour

¾ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon (optional)

4 ripe bananas, mashed

½ cup cottage cheese

1 cup granulated sugar

2 large eggs

⅓ cup vegetable oil

1 teaspoon vanilla extract

(Optional) ½ cup chopped walnuts or chocolate chips

Instructions

  • Preheat oven to 350°F (175°C).

  • Grease a standard 9×5 loaf pan with butter or spray.

  • (Optional: line with parchment paper for easy removal.)

Notes

– Use overripe bananas for best flavor and texture.

– Do not overmix the batter—this ensures a soft, tender crumb.

– You can replace sugar with coconut sugar or half the amount of maple syrup.

– To make muffins, bake at 350°F for 18–22 minutes in a standard 12-cup muffin tin.
