This moist, high-protein banana bread is made with cottage cheese and no flour—just 6 simple ingredients blended to perfection and baked golden.
Ingredients
– 3 medium ripe bananas
– 2 large eggs
– 1/4 cup pure maple syrup (or honey)
– 1 teaspoon baking soda
– 2 cups old-fashioned rolled oats
– 1/2 cup cottage cheese
Instructions
– Preheat oven to 350°F. Lightly grease a 9×5-inch loaf pan or line with parchment paper.
– Add bananas, eggs, maple syrup, baking soda, oats, and cottage cheese to a blender in the listed order.
– Blend until smooth and well combined.
– Pour batter into prepared loaf pan. Garnish with banana slices or oats if desired.
– Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
– Let the loaf cool completely in the pan before slicing.
– Store in an airtight container on the counter for 2–3 days or in the fridge for up to 1 week.
Notes
– You can replace maple syrup with honey or agave.
– For a dairy-free version, use plain plant-based yogurt in place of cottage cheese.
